This is made from palm sap extract after proper filtration and pH maintained above 7. Sap extract (Neera) is evaporated at low temperatures, forming a semi-liquid syrup without adding any ingredients or chemicals. This syrup is then crystallized by using traditional cooling methods using earthen pots.
